Marinating
Similar to injecting (which is deep/fast marinating), and brining, this is a simple way to add moisture and flavor as well as tenderize meat since most marinades are acidic in nature.
Marinades often include vinegar, lemon, lime juice, apple and other fruit juices, Worcestershire sauce, Soy sauce, wine, and spices and seasonings. The same mixtures as used in brining and injection work well for marinating.
A basic recipe follows. Add your favorite ingredients and enjoy!
1/4 cup olive oil
2 tablespoons soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons apple cider vinegar
2 tablespoons lemon juice
salt and pepper to taste
dash of garlic and onion powder
splash of wine (or red wine vinegar) if desired
Simply mix the ingredients and cover the meat and return to the refrigerator for several hours before cooking. You can use a fork or tenderizer to poke holes in the meat so the marinate can work its way in. Zip lock bags are ideal for marinating as they can be turned occasionally to make sure the entire surface of the meat is exposed.
